Heat control, smoke discipline, and why almost nothing needs to taste aggressively smoky.
Charcoal is a heat source first and a flavor second. The best results come from clean embers, distance, and patience—not clouds of smoke.
Our fire station runs vegetables, octopus, skewers, and rice cakes at different elevations. Every item gets its own zone and timing.
