Why the menu moves
A restaurant should feel alive. Ours changes as the market, weather, and crew do.
We keep a small permanent spine of dishes, then rotate everything around it. That makes room for the fish that is best this week, the pepper that just came into season, and the idea the line cooks cannot stop talking about.
The result is a menu that rewards repeat visits without becoming unpredictable. You can always find a cold plate, something from the fire, a bowl, and a bright drink.
